Ola Rapeseed Carrot Cake

 

Ingredients
1 cup self raising flour
1 cup caster sugar
½ teaspoon baking powder
½ teaspoon bicarbonate of soda
2 teaspoons cinnamon
2 eggs
A cup and ½ of grated carrot
½ cup of Ola Rapeseed Oil

Method
Mix all dry ingredients together.
Add Ola Rapeseed Oil, carrot and eggs and mix thoroughly.
Place in 8” square baking tin.
Bake at 180 degrees/gas mark 4 for approximately 40-45 minutes.

Dust with icing sugar, or 1 carton of Soft Cream Cheese mixed with enough icing sugar to thicken. Add 3 tablespoons of double cream and a few drops of vanilla essence. Spread on top.
